Date, Cashew and Coffee “Chocolates”

If your answer was “incredible” you’ll be pleased to know they taste EVEN BETTER than they look. If your answer was “meh, they’re OK”, I’m here to tell you that you’re wrong, and you should have picked the first answer.

Unfortunately I did not come up with this amazing recipe, I learnt about it from a lady called Susanna K in the Blogilates Hot Body Challenge Dietbet. Whoever came up with the idea originally I have no clue, but massive kudos to them because these were delicious and I’m extremely sad that I ate the last three one today.

Not only are these chocolates very tasty, they’re also very healthy and therefore completely guilt free. It was moment of both great joy and great sadness to discover that regular chocolate from a ‘dark chocolate selection’ tasted bland and rather disgusting after eating these. Sadness that regular chocolate doesn’t cut it anymore, but joy that it’s even easier for me to stick to healthy eating!

Date, Cashew and Coffee “Chocolates”
(Makes 16-18)

You will need:

3/4 cup cashews
3/4 cup oats
2 tbsp liquid coffee
2 tbsp cacao powder
8-10 pitted dates (I used 8 large Medjool dates)
Dessicated coconut

This is one of the quickest recipes that can possible exist. First, blitz the cashews by themselves in a food processor (or, blender, or just put them in a bag and hit them with a rolling pin many, many times) until they’re broken up and resemble a coarse powder.

Add the oats, coffee, cacao powder and dates and continue to blend. If you went for the rolling pin approach to grinding the cashews, you’ll want to transfer everything into a bowl first. They will mix into one ginormous ‘chocolatey’ ball of deliciousness. If you went for the rolling pin approach to grinding the cashews, you’ll want to transfer everything into a bowl first before mixing.

Divide the mixture evenly, roll into a little ball and dust in dessicated coconut.

Place in box, store in fridge. Try not to eat them all in one go.
