This recipe is a classic in my house at the moment. We’ve had our ups and downs, but turkey burgers seasoned with spinach and feta have been a constant in my life for at least the past three years. I’ve written up the most recent version of the recipe, but I’ll also give you the no-food-processor method, which was my main method for many years!
Turkey, Feta and Spinach Burgers
You will need:
600g turkey breast steak
1 large egg
1 clove garlic
To start with, slice the turkey breast into chunks and add to the food processor with a large egg. Combine until it resembles turkey mush.
Add 1 clove of garlic, 100g feta and 200g of spinach (wilt in a dry pan first to reduce the moisture) and continue to blend together. The mixture should turn green and come together into one giant meatball.
Divide the mixture into eight, shape them into burger patties and fry in a little olive oil until cooked all the way through, about 8 minutes in total. I froze half of the mixture to use at a later date.
And there you have it! Eight extremely quick, simple turkey burgers ready to eat. If you don’t have a food processor, fear not! Neither did I when I first started using this recipe. Simply replace the turkey breast steaks with 500g turkey mince, then crumble the feta, dice the garlic and mix everything in by hand.
There are pros and cons to this. Mixing it all by hand means that you get chunks of feta and whole strands of spinach, which really are delicious – the feta especially, and which is an experience sadly missing from the food processor version where everything is distributed evenly throughout the mixture. However, the strands of spinach in the hand-mixed version can be quite wet and release a lot of moisture, which adds an extra difficulty in holding the burger together. Using a food processor definitely helped the mixture stay together more easily, especially since the egg was blended in much better than I could do by hand.
I’m not entirely sure which my favourite version is. Try both and let me know what you think!
