Super Berry Smoothie!

Hello! Just a quick post today, because I wanted to share this really delicious (and super!) berry smoothie recipe with you.

I’m used to having fairly rich, heavy, decadent smoothies, ever since I was introduced to the idea of a ‘strawberry shortcake’ smoothie several years ago – something I’m sure I will share with you at some point, because I won’t be able to resist making it again now that I’m back on the smoothie train. So I’m used to using yoghurt, or almond/soy milk, or even adding a little bit of ice cream in here or there! They were very tasty, but if you – like myself – are a bad smoothie-sharer and drank the whole thing yourself, you often had to lie down for a while afterwards and recover.

This is different.  It’s light and refreshing berry smoothie, full of fruits, greens and seeds that pack a real nutritional punch without making it feel ‘too healthy’. Plus it’s a gorgeous deep purple colour, which just makes everything oh so much better!

Smoothie ingredientsYou will need:
(Serves 2 [or, if you’re like me, just 1])

1 cup frozen mixed berries (blackberries, blackcurrents, redcurrents and strawberries)
1 cup spinach
1/2 cup kale
1/4 cup rolled oats
1 tbsp chia seeds
1 tbsp hulled hemp seeds
300 ml coconut water

The “instructions” themselves are incredibly simple – throw everything in a blender (I tend to always put frozen things in first) and blitz it all together!

Smoothie mid-blend

I love that when you’re using a hand blender and working from the top down, at some point the ingredients will have started to smush into liquid form but won’t have completely mixed together, and there’s such a lovely wash of red into green before they blend together into the deep purple that is the final colour.

The great thing about this smoothie is that it just has a bit of everything – it’s light because of the coconut water base, it’s got just the right amount of sweetness from the berries that it’s not over-sweet, nor does the kale make it bitter (that said, if you happened across a slightly bitter set of berries, feel free to add a tablespoon of maple syrup). You’ve got some protein from the chia and hemp, slow-release carbs from the oats. The berries are full of vitamin c (as well as plenty of other vitamins), the greens provide iron and vitamins k and a, plus the chia and hemp seeds are also full of healthy omega-3 and omega-6 fats, not to mention the chia provides a whole 5g of fibre in one tablespoon of seeds!But the even better thing about this berry smoothie is that it’s just good! A great, quick, delicious drink to accompany the upcoming (hopefully) warm, sunny summer days. I can’t wait to make more.
